1 tsp sesame oil - 

1/4 cup maltose (or substitute with honey) 

Instructions: 

1. Clean the duck thoroughly and pat dry with a paper towel. 

2. Mix together salt, five-spice powder, and Sichuan peppercorn in a small bowl. 

3. Rub the mixture all over the duck, making sure to get into the crevices and under the skin. 

4. In a separate bowl, mix together honey, soy sauce, Shaoxing wine, and sesame oil. 

5. Brush the mixture all over the duck, including the cavity. 

6. Hang the duck up in a cool, dry place and let it air-dry for at least 4 hours, or overnight if possible. 

7. Preheat the oven to 375°F (190°C). 

8. Mix maltose with 1/4 cup of hot water until dissolved, then brush it all over the skin of the duck. 

9. Roast the duck for 50-60 minutes, until the skin is golden brown and crispy. 

10. Serve with steamed buns, hoisin sauce, and scallions.
