During fermentation, the yeast breaks down the sugar, releasing friendly probiotic bacteria. These bacteria line our digestive tract, supporting immune function and absorbing nutrients.

My personal experience with brewing kombucha As someone who has emphasized my physical health goes hand in hand with mental health, I was intrigued when I first heard about kombucha and its potential health benefits. So, I decided to try brewing my own. The first step was sourcing the right ingredients and starter culture. I opted for organic black tea and brown cane sugar as my sugar source. As for the starter culture, I found one online that had good reviews and was known for producing a flavorful finished product. (Yes I Amazoned, I'm sorry ) 



The brewing process itself was relatively simple and straightforward. I brewed the tea, added the sugar, and let it cool before adding the starter culture. Then, I let it ferment for about a week, tasting it every day to check for optimal flavor and carbonation. One of the tips I found helpful was to cover the brewing vessel with a coffee filter instead of a tight lid. This allowed for air to circulate and helped prevent contamination. 

Overall, I found the process of brewing kombucha to be surprisingly easy and enjoyable. Not only did I end up with a delicious, fizzy beverage, but I also noticed improvements in my digestion and overall gut health. Of course, there were a few mistakes along the way. I learned the hard way that over-fermentation can result in an overly sour, vinegary taste. On the other hand, under-fermentation can lead to a flat, bland drink. But with some practice, I was able to adjust the brewing process to my personal taste preferences and achieve a consistently delicious result.
